Food Diaries - Part 2

 

As you may have realized, my everyday life is majorly uneventful. So, I’m going to be diving back into my food diaries now that I don’t have any other exciting events to cover. Cooking is a huge passion area for me, I love cooking for my closest friends and family. 

To kickoff this week’s round up of my favorite recipes from the past several days, we have a classic. I made homemade tomato soup with grilled cheese sandwiches on the side. Honestly, this meal really gave off nostalgic vibes and was a great comfort food. It was a hit with my entire household and was a great way to kickoff the fall season. The soup consisted of roasted garlic, onion, a red pepper, a carrot, and of course heaps of tomatoes. Throw in some herbs and spices, heavy cream along with chicken broth and the result is absolutely phenomenal. 



Moving on to the next meal, one that we all know and love, Lasagna! My parents have always made the best lasagna, it was one of my favorites while growing up. So, as I got older, I made sure to learn the recipe. On Monday I finally decided to make it for my roommates, both of which haven’t had homemade lasagna in a very long time. Needless to say, I was super excited to make this for them. We had cheesy garlic bread on the side and the whole meal turned out so great. It was nice getting to take a stroll down memory lane as I was cooking and then eating this meal. 


The last meal I’ll be covering is another favorite of mine. Today I made butter chicken served on top of rice with a side of naan. This meal is super rich in flavor and culture, so its always a winner when serving it to others. This dish has so much depth when it comes to taste, the tomato-based sauce has a mixture of spices and a little kick of heat to it as well. Topping it with cilantro gives a fresh twist to the flavor profile and compliments the other flavors. Naan is already delicious on its own, but after scooping up a bite of the chicken with it, it becomes ten times better. 

Overall, these past few meals have been so fun to make and have been such a great way to bond with my friends. Next week we’re focusing on plant-based foods, so keep an eye out for the next post!

  1. Oh my, all of these were SO good!!! I can't believe the soup accidentally found its way down the drain... That butter chicken was absolutely to die for, can't wait to have it again!
