As we return to our regularly scheduled programming, I’ll be covering my food adventures once again. Over the past week or so I’ve been able to cook some fun recipes. However, as a fair warning, I’ve slacked a little when it comes to taking photos of the recipes. So, this post will be lacking the added visuals.
Last week my roommates and I decided to focus on plant-based options for dinner. So, our meals were vegan or vegetarian. One of the meals I made was a white bean parmesan served with pasta. This was essentially a vegan version of chicken parmesan, in which the chicken substitute was made out of cannellini beans. To be honest I was a little skeptical on how the “chicken” would turn out, but it turned out really well. Surprisingly the bean mixture held up really well and I was able to form it into shapes the resembled actual chicken. The entire meal was definitely better than expected and is probably one of the best vegan meals I’ve had.
Another huge hit was the cauliflower wings I made for dinner. These turned out insanely good and we paired them with crispy tater tots on the side. I created a batter to dip the raw cauliflower in and then used an air fryer to cook them. This was such an easy meal and the result was great. They were packed with flavor, crispy, and left us feeling light and healthy even though we had just eaten a ton of wings.
Lastly, I made vegetarian fajitas. Now, I love chicken fajitas, but these were a super easy substitute. I sautéed sliced bell pepper, onion, and Portobello mushrooms that were seasoned with a little bit of soy sauce and all the normal seasonings you’d find in fajitas. Topped with cheese, sour cream, and cilantro these tasted amazing. This was one of those meals that are super simple yet so delicious.
Jasmyn, I find it so interesting reading about the vegan dishes you make! I love the idea of cauliflower wings!! I’ve had cauliflower rice and cauliflower pizza before and really enjoyed it so I feel like I would definitely really like the wings! Thank you for sharing :)
ReplyDeleteI did keto awhile back and cauliflower rice and such was a staple in the diet. Now while you could eat meat, trying healthier options like cauliflower wings and cauliflower crust for pizza were fun. I would recommend trying buffalo wings but cauliflower instead, it's pretty good!
ReplyDeleteJasmyn! I love how you are cooking vegan dishes! When I first started cooking some years back my family was vegan and I came up with crazy vegan dishes. I'v made the cauliflower wings like you said and I absolutely adored them. They are definitely a go to meal when wanting something easy but delicious. Using beans as a substitute for chicken is perfect but I've never been able to perfect it. It sounds like you were able to make a delicious chicken parmesan and I'm a bit jealous! But, if you ever need any vegan dishes let me know I have plenty that will make dinner exciting!
